For the cookie dough, you will need:
- 375 gr flour
- 2 eggs
- 125gr icing sugar
- 100gr honey
- 75 gr melted butter
- ½ teaspoon baking soda
Mix spices (ginger, cinnamon, cloves, nutmeg cardamom) or your choice of spicesMix the eggs with the icing sugar add the melted butter not too hot, add the honey then the spices and the baking soda. Between all steps mix well. Then add the flour mix it for 5 minutes. You can use hand or mixer. When it’s ready cover it with cling film live it to rest overnight. Next day bake it on 160C for 3-6 min ready when is golden colour.
For the white icing, you will need:
- One egg white
- icing sugar
Mix until creamy add sugar as needed approx. 250gr.
For the red glaze you will need
- One egg yolk
- 2 spoonfuls of milk
- Red food colouring.
When it’s mixed use a brush to colour the baked cookies and place it on a cooling rack. Use the rack to place it in the oven for 10-15 min on 40C until dry for touch.
Wait until cool down, then ready to decorate.
Storage: Keep your cookies in airtight container or cellophane bag. They will keep for 6 months, as a decoration they can be kept for years.
